Miller family KB — adaptation notes written against the Meals Made Easy recipes in this KB

Why This Page Exists

Aliyah and Naomi must eat gluten-free AND dairy-free. The goal is for the whole family (8 people) to eat the same dinner, so every swap below applies to the whole pot, not a separate plate.

Scaling: Most Meals Made Easy recipes serve 6. For 8, multiply by 1.5. For a recipe that also feeds the weekly leftover night, double it.

Hidden Gluten & Dairy Watchlist

Ingredient Problem Swap / What to Buy
Soy sauce Brewed with wheat Tamari labeled gluten-free (San-J and Kikkoman both make GF tamari) or coconut aminos
Teriyaki / oyster / hoisin sauce Usually contain wheat soy sauce Make the sauce from scratch with tamari, or buy a GF-labeled bottle
Worcestershire Some use malt vinegar (barley) Lea & Perrins (US) is labeled GF. Check the bottle
Broth / stock / bouillon Can contain wheat, barley-based yeast extract, or milk Cartons labeled gluten-free. Avoid bouillon cubes unless labeled
Cream soups (cream of chicken) Wheat flour + milk Not used in our rotation. The recipe that needs it is marked not workable
Seasoning packets (taco, fajita, Italian dressing, ranch) Wheat flour fillers, milk powder Mix your own spices (see the new recipes), or buy GF-labeled packets
BBQ sauce Some contain malt vinegar, wheat soy sauce, or beer Buy a GF-labeled bottle (many major brands are)
Enchilada sauce Some red sauces are thickened with wheat flour Check the label. Old El Paso red and many store brands are flour-free, but labels change
Smoked sausage, hot dogs, deli meat Fillers, wheat starch, milk/whey/casein Read the full ingredients list and look for a GF label
Breadcrumbs / panko / saltines Wheat GF panko, crushed GF crackers, or certified GF rolled oats
Butter Dairy Plant butter sticks (Country Crock Plant Butter, Earth Balance) — they bake and sauté 1:1
Milk, half & half, cream Dairy Unsweetened plain oat milk (certified GF oats only), almond milk, or canned coconut milk/cream for rich sauces
Cheese, Parmesan, cream cheese, sour cream, yogurt, buttermilk Dairy Skip it, use a DF shred (Violife, Daiya), DF sour cream, or "buttermilk" made from 1 cup DF milk + 1 Tbsp lemon juice
Flour (dredging, roux, gravy) Wheat GF 1-to-1 baking flour (Bob's Red Mill 1-to-1, King Arthur Measure for Measure) or a cornstarch slurry
Tortillas Flour tortillas are wheat Corn tortillas labeled GF, or GF flour-style tortillas (Siete, Mission GF)
Pasta, orzo, noodles Wheat GF pasta (brown rice or corn/rice blends) or rice noodles. Cook in its own pot
Buns, rolls, bread, pizza crust Wheat (and often milk) GF and DF breads (Canyon Bakehouse and Schär are common). Many GF breads contain milk or egg, so read the label
Cornmeal, oats Often cross-contaminated Buy ones labeled gluten-free
Tortilla chips Shared fryers / lines Bags labeled gluten-free
Pesto Parmesan DF pesto (homemade: basil, olive oil, pine nuts, garlic, lemon, nutritional yeast)

Brand names are examples to look for, not guarantees. Formulas change, so read every label every time.

Kitchen Cross-Contact Basics

  • Cook the GF pasta in a clean pot with a clean colander. Don't reuse wheat-pasta water.
  • Use separate butter tubs and condiment jars (crumbs get in). Squeeze bottles help.
  • Use a separate toaster, or toaster bags, for GF bread.
  • Since the whole family eats the GF/DF meal, any regular cheese or bread for others goes in its own bowl with its own serving spoon, served after the girls dish up.
