Chicken Broccoli Creamy Orzo
Servings: 6 | Prep & Cook: 40 minutes
Ingredients
- 1½ Tbsp avocado oil
- 1½ lbs diced chicken breast
- 1½ tsp salt
- 1½ tsp black pepper
- 3 Tbsp butter
- 6 cloves garlic, minced
- 2¼ cups diced broccoli
- 1½ cups orzo pasta
- 3 cups chicken broth
- 1½ cups heavy cream (plus more as needed)
- 2¼ cups sharp cheddar cheese, shredded
Directions
- Heat oil in a large skillet over medium-high heat. Add broccoli and cook 8-10 minutes until tender. Remove and set aside.
- Season chicken with salt and pepper. Add to the same skillet and cook 5-6 minutes until golden brown.
- Add butter and garlic, cook 1 minute until fragrant.
- Add the orzo pasta to the pan and toast for 1-2 minutes, stirring frequently.
- Pour in the chicken broth and bring to a simmer. Cover and cook for 8-10 minutes, stirring occasionally, until orzo is tender and most liquid is absorbed.
- Add the heavy cream and stir to combine. Add broccoli back in and stir in the sharp cheddar until melted and creamy. Add more cream if needed to reach desired consistency.
- Taste and adjust seasoning. Let stand for 2-3 minutes before serving.
Prep Tips
- One-skillet meal — minimal cleanup
- Leftovers reheat well; add a splash of milk to revive the creaminess
