Chicken Pot Pie Soup

Servings: 6 | Prep & Cook: 15 minutes

A quick and cozy way to transform leftover Chicken Pot Pie into a hearty soup.

Ingredients

  • 3 cups leftover Chicken Pot Pie (crumbled/shredded, including crust)
  • 2-3 cups chicken broth
  • ½ cup heavy cream
  • Salt and pepper to taste

Directions

  1. In a large pot, add leftover pot pie and chicken broth. Bring to a simmer over medium heat, breaking up the crust pieces as it heats.
  2. Stir in heavy cream and simmer for 5-10 minutes until flavors meld.
  3. Season with salt and pepper. Serve with homemade biscuits or crusty bread.

Tips

  • The pie crust thickens the soup naturally — no need for flour or cornstarch
  • Add frozen peas or carrots for extra vegetables
  • If you don't have leftover pot pie, use shredded chicken + 1 cup of small pasta + the same liquid
