Meatball Fried Rice

Servings: 4 | Prep & Cook: 15 minutes

Ingredients

  • 12-16 leftover meatballs (turkey or beef), roughly chopped
  • 3 cups leftover cooked rice (day-old is best)
  • 2 Tbsp avocado oil
  • 2 eggs, beaten
  • ½ cup frozen peas and carrots
  • 2 Tbsp soy sauce
  • 1 tsp sesame oil
  • 2 green onions, sliced
  • Sesame seeds for garnish

Directions

  1. Heat oil in a large skillet or wok over high heat.
  2. Add chopped meatballs and cook until heated and slightly crispy, about 3 minutes. Remove to a plate.
  3. Add eggs to the hot pan and scramble quickly. Remove and set aside.
  4. Add peas and carrots, cook for 1-2 minutes.
  5. Add leftover rice, breaking up any clumps. Spread flat and let it sear for 30 seconds, then stir. Repeat 2-3 times.
  6. Drizzle soy sauce and sesame oil over the rice. Stir to combine.
  7. Return meatballs and egg to the pan. Toss everything together.
  8. Top with green onions and sesame seeds.

Tips

  • Works with Turkey Spinach Meatballs or Asian Glazed Turkey Meatballs
  • Cold rice from the fridge works best — fresh rice gets mushy
