Sheet Pan Smoked Sausage, Potatoes & Green Beans

Servings: 8 | Prep & Cook: 55 minutes

Ingredients

  • 2 (14 oz) packages smoked sausage or kielbasa, labeled gluten-free and dairy-free, sliced into ½-inch coins
  • 3 lbs baby or small yellow potatoes, halved (quartered if large)
  • 1½ lbs fresh green beans, trimmed
  • 1 yellow onion, cut into chunks
  • 4 Tbsp olive oil, divided
  • 2 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp Italian seasoning
  • 1½ tsp salt
  • ½ tsp black pepper

Directions

  1. Preheat the oven to 425°F. Line two sheet pans with parchment or foil.
  2. Toss potatoes with 2 Tbsp oil and half of the seasonings. Divide between the pans and roast 20 minutes.
  3. Meanwhile, toss sausage, green beans, and onion with the remaining 2 Tbsp oil and seasonings.
  4. Add the sausage mixture to the pans, toss with the potatoes, and spread out evenly.
  5. Roast 15-20 minutes more, until the potatoes are fork-tender and the sausage is browned.
  6. Serve with mustard or ketchup for dipping.

Tip: Give the potatoes their 20-minute head start, or they'll still be firm when the sausage is done.

GF/DF Notes

  • Sausage is the one item to check: look for a gluten-free label and no milk, whey, or casein in the ingredients. Many store-brand smoked sausages qualify.
  • Check the Italian seasoning blend for anti-caking fillers (rare, but it happens).

Leftover Ideas

  • Chop leftovers into a breakfast hash topped with fried eggs
  • Add leftovers to scrambled eggs or a quick skillet with rice
