Crockpot Taco Soup

Servings: 8 | Prep & Cook: 6 hours on low (15 minutes hands-on)

Ingredients

  • 2 lbs ground beef or ground turkey
  • 1 yellow onion, diced

Homemade Taco Seasoning: 2 Tbsp chili powder, 2 tsp ground cumin, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried oregano, 2 tsp salt - 2 (15 oz) cans black beans, drained and rinsed - 1 (15 oz) can pinto beans, drained and rinsed - 1 (15 oz) can kidney beans, drained and rinsed - 2 (10 oz) cans diced tomatoes with green chiles (Rotel) - 1 (15 oz) can tomato sauce - 2 cups frozen corn - 3 cups gluten-free beef or chicken broth

Toppings: certified gluten-free tortilla chips, diced avocado, cilantro, lime wedges, dairy-free sour cream (optional)

Directions

  1. Brown the beef and onion in a skillet over medium-high heat, 8-10 minutes. Drain the fat.
  2. Add the beef mixture and all remaining ingredients (except toppings) to the crockpot, including the taco seasoning. Stir well.
  3. Cover and cook on LOW for 6 hours or HIGH for 3 hours.
  4. Taste and adjust salt. Serve with crushed tortilla chips and toppings.

Tip: In a hurry? Simmer everything on the stovetop in a large pot for 30 minutes instead.

GF/DF Notes

  • Homemade taco seasoning avoids packet fillers (wheat flour and maltodextrin of unclear origin are common).
  • Tortilla chips: buy ones labeled gluten-free. Some are fried in oil shared with flour products.
  • Use broth labeled gluten-free.

Leftover Ideas

  • Freezes great in quart containers
  • Spoon thick leftovers over rice or baked potatoes
