Shepherd's Pie (Leftover Makeover)

Servings: 6 | Prep & Cook: 45 minutes

An excellent way to stretch your leftovers into a completely new meal. Works with leftover pot roast, meatloaf, or even Korean beef.

Ingredients

  • 3-4 cups leftover shredded or chopped meat (pot roast, meatloaf, or beef)
  • 1 cup leftover cooking juices or beef broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 Tbsp tomato paste (optional, for color)
  • 1 tsp Worcestershire sauce
  • 1 recipe Mashed Potatoes (about 3 cups prepared)

Directions

  1. Preheat oven to 375°F.
  2. In a 9-inch baking dish or skillet, combine leftover meat, cooking juices/broth, frozen vegetables, tomato paste (if using), and Worcestershire sauce. Stir to combine.
  3. Spread the meat mixture in an even layer.
  4. Top with prepared mashed potatoes, spreading to cover completely. Use a fork to create ridges on top.
  5. Bake for 25-30 minutes until bubbling around the edges and potatoes are lightly golden.
  6. Let rest 5 minutes before serving.

Tips

  • If using meatloaf leftovers, crumble the meatloaf before adding to the dish
  • Add shredded cheddar on top of the potatoes in the last 5 minutes for a cheesy crust
  • This freezes beautifully — assemble, cover, and freeze for up to 3 months
