Bang Bang Chicken Sliders

Servings: 12 sliders | Prep & Cook: 45 minutes

Ingredients — Chicken & Marinade

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup all-purpose flour
  • 1 cup panko breadcrumbs

Ingredients — Bang Bang Sauce

  • ½ cup mayo (or Greek yogurt)
  • ¼ cup sweet chili sauce
  • 2 Tbsp sriracha sauce
  • 1 Tbsp honey

For Assembly

  • 12 mini slider buns
  • 12 slices mozzarella cheese

Directions

  1. Cut chicken breasts into pieces that will fit nicely on your slider buns.
  2. Make the marinade: combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper in a large bowl. Add chicken and marinate for 1 hour in the refrigerator.
  3. While chicken marinates, prepare bang bang sauce: whisk together mayonnaise, sweet chili sauce, sriracha sauce, and honey until combined. Refrigerate.
  4. Preheat oven to 400°F (or air fry at 375°F for 8 minutes per side).
  5. Mix flour and panko breadcrumbs in a shallow dish.
  6. Remove chicken from marinade, let excess drip off. Dredge each piece in flour-panko mixture, pressing gently to coat well. Place on a greased baking sheet and spray or drizzle with oil.
  7. Bake for 20-25 minutes until golden brown and cooked through (internal temp 165°F).
  8. Assemble sliders: lightly toast buns, spread bang bang sauce on top and bottom, add chicken and cheese.
