Chicken Burrito Bowls

Servings: 4 | Prep & Cook: 10 minutes

Want to make these from scratch in the Instant Pot instead of using leftovers? Try the Instant Pot Chicken Burrito Bowls — one pot, 30 minutes, all cooked together.

Ingredients

  • 2 cups leftover Cilantro Lime Chicken, shredded or diced
  • 2 cups leftover Coconut Rice or Spanish Rice
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • Toppings: diced avocado, salsa, sour cream, shredded cheese, cilantro, lime wedges

Directions

  1. Warm the rice in the microwave or in a skillet with a splash of water.
  2. Warm the leftover chicken in a separate skillet.
  3. Layer in bowls: rice → chicken → black beans → corn → toppings.
  4. Squeeze fresh lime over each bowl and serve.

No Leftover Rice?

Use store-bought or plain cooked rice. Heat with a little cumin and lime juice to mimic the original flavor.
